Our Philosophy

Long before the resurgence of Mezcal, in a VW bug and equipped with little more than a change of clothes, Karen and Dominic headed to the mountains of Oaxaca in an effort to escape the coastal heat of August, and stumbled upon the magical land of Mezcal.

In a self-guided ‘tour’, they fell in love with mezcal and agave spirits and how they are rooted in the land, people, and culture of Mexico.

They took their first chance they had go back to Mexico and moved to Guadalajara in 2005 where they were introduced to the world of Tequila, gaining knowledge of the product and industry while living in the region of Denomination of Origin of the spirit.

With the knowledge acquired in their time spent in Guadalajara, Dominic and Karen recognized the lack of options in Canada with respect to 100% de Agave Tequila, as well as the increasing popularity of the spirit.

In 2010, Karen and Dominic returned to Guadalajara and dedicated their time to learning everything they could about tequila and agave spirits – the terroir, the process, the chemistry, the aging, and how every detail and subtlety influences the final product.
