Whiskey with an ‘e’ is how local Tasmanians prefer to distinguish their whiskey from whisky produced in other parts of the world. Over the last 20 years, Tasmania has cultivated a small but vibrant industry that is producing some of the best whiskey in the world. And since Tasmania is home to the worlds cleanest air and purest water, it has the ideal climate for growing the ingredients needed to produce Whiskey.
Owned and operated by Peter Bignell, Belgrove Distillery is Tasmania’s original Rye Distillery. Starting out with a handful of heirloom rye corn seeds, Peter has created a sustainable, closed loop and green whiskey by creating everything he needs to make whiskey on his own estate. He built his copper still from scratch, which is direct fired with bio fuel, making Belgrove Distillery the only biofuel powered distillery in the world. He reuses the used cooking oil (biofuel) from a local restaurant to run the whole show. The hot water is biofuel heated and his tractors, forklift and truck also run on biodiesel made from the used cooking oil too.
The water used to brew and dilute the whiskey is harvest from the roofs of his farm sheds and any cooling water comes from the dam. Waste Water is either recycled or used for irrigation, including the next rye crop and any spent or used mash (the mixture of grain, water and yeast used during fermentation) is fed to the Belgrove Sheep.
