Hand-harvested and carefully placed in crates. Grapes undergo destemming, gentle pressing, and an 8-day maceration with the skins in a cement tank at an uncontrolled temperature. The process includes one daily pumping over. Malolactic fermentation is carried out in either steel or cement tanks. By spring, the wine is racked and bottled, ready for release before Easter.
