Champagne Chavost is located in the small village of Chevot-Courcourt which is situated on the top of a majestic hill in the centre of Champagne. The vineyards at the top of the hill are full limestone and as the hill slopes downwards it becomes more chalky.
The Champagne Chavost estate was created in 1946 by a group of winegrowers of Chavot-Courcourt that created a co-op. The co-op is still in operation today and is headed by winemaker, Fabian Daviaux. In recent years, Fabian has persuaded the co-op and many of its growers to become organic.
It is Fabian’s goal to add nothing to his wine. He currently adds no sulphur, sugar or yeasts to the wine. The resulting champagne is pure, transparent and easy to drink.
